Sausage, Garlic & White Bean soup
This is by far one of our favorites. It is easy to make, frugal, and a one-pot meal (which means fewer dishes)
2 TBLS oil or fat - I used the fat from my canned sausage
1/4 c diced onion
4 cloves minced garlic
1 TBLS fresh Rosemary or 1 tsp dried Rosemary
1 tsp dried oregano
1 tsp salt
4 cans white beans drained and rinsed or 6 cups
3 c broth or water
1/4 c country gravy mix - optional
Coat the bottom of the pot with a thin layer of oil. If using the fat from the sausage then add the whole jar to the pot along with the onion.
Cook until onion is a bit soft then add the garlic, rosemary, oregano, and salt. Also, add the gravy mix at this time if you are using it.
Add the beans and the liquid.
Cook over medium heat, stirring often.
Optional Thicken with cornstarch/arrowroot slurry, potato flakes, cooked mashed potatoes, or smash some of the beans in the pot.
